Quinoa Salad


Tonight I made my first dinner in our new place... and SUCCESS! was mine : )

Both kids ate and liked it! + + +

The only thing is I wish I made more to send along for lunch tomorrow.



Quinoa Salad:

1 cup (measured dry) quinoa

1 avocado (diced and tossed in the juice of 1/2 lemon, and 1/4 tsp salt)
1 med cucumber
about 1/4 c cooked adzuki beans
1/3 c Apple cider vinegar
2 tsp Italian seasoning
~1/2 lemon zest


To cook the quinoa I rinse then lightly toast in about 1 tbsp. olive oil. ~ 5 min then add 2 cups water bring to a boil. cover turn down to a light simmer and cook for 15 min. turn off and let ret 5 min. toss everything together gently.

EAT!
